These easy-to-make bars call for gluten-free oat flour, nuts, fruit, dates, seeds and a tasty nut butter to hold it all together.

Ingredients
1 cup nut butter (almond, peanut, sunbutter, cashew)
¼ cup maple syrup
¾ cup vanilla protein powder
½ cup oat flour (gluten-free ground oats)
2 tablespoons ground flaxseed
2 juicy medjool dates (pitted and finely minced)
2 tablespoons freeze-dried dried blueberries or raspberries
2 tablespoons sliced toasted almonds
3 tablespoons freeze-dried dried blueberries or raspberries
Directions
In a food processor, process the nut butter, maple, protein powder, oat flour, flax and dates until smooth. Transfer to a bowl and mix in the freeze-dried fruit and almonds.
Pack it into a six-inch square pan lined with parchment paper with “wings” coming out both sides. Press the mixture in very firmly then top with the additional freeze dried fruit.
Pack it down then freeze for 10-15 minutes. Cut into bars and enjoy.
