We challenged Rodney to make five meals in under an hour

You may remember a few months ago when we challenged Christine Cushing to whip up five dishes in under an hour, and now it's Rodney's turn! With just pantry basics and fridge essentials on hand, he had to get creative in the kitchen to come up with a handful of recipes before the show was over. Since he was limited with ingredients and time, he had to get creative, and we think he did an amazing job. We may not have exact recipes to share since these were all created on the spot, we think they're a great jumping off point for your own kitchen adventures. Each dish is Rodney's take on a family classic and his list of ingredients is a great jumping off point if you're feeling advenuturous yourself.

Skillet Creamed Scalloped Potatoes


Scalloped potatoes are that dish that everyone (and we mean everyone) loves, but rarely takes the time to make. But why is that? It may seem complicated for time consuming, but it's really just a handful of ingredients that you probably already have at home.

  • Russet potatoes
  • Sweet onions
  • Fresh thyme
  • Heavy cream
  • Butter
  • Freshly grated cheddar cheese
  • Parmesan cheese

Stone Fruit Brown Sugar Crumble


Having a quick and easy crumble recipe in your back pocket is always handy when company shows up enexpectantly. Rodney uses a mixture of stone fruit, but you could use whatever fruit you have on hand!

Amped Up Nicoise Salad


This is a kind of 'everything but the kitchen sink' salad, with canned beans, salmon, fresh veggies and a simple homemade salad. Take what you like and leave the rest!
