Low Cal Cocktails and Food Pairings


Vodka Martini

Ingredients:
  • 44 ml Vodka 
  • Dash black pepper infused vermouth*
  • Stirred with fresh coriander leaf and strained into a chilled martini glass
  • Garnish with lemon twist 
* To make: Black pepper corns infused into Noilly Prat Dry for 24 hours
 
Directions:
  1. Place vodka, coriander and dash of vermouth into a cocktail glass and top with ice
  2. Stir and strain into a chilled cocktail glass
  3. Garnish with lemon twist 
Approx. Calorie Breakdown:
  • 44 ml of Vodka = 97.5 calories
  • Dash of vermouth = 10 cals
  • Coriander = 0 cals
  • Lemon twist = 0 cals
  • APPROX. TOTAL = 107.5 cals
Notes on Drink:

Claire will add a small amount of the vermouth to the drink and stir with the coriander leaf. Otherwise, the spray from the lemon twist will interfere with the flavour of the cocktail.

PAIRED WITH: Marinated Lake Trout on Sourdough Rye

Cinnamon Mule

Ingredients:
  • 44 ml Vodka 
  • ½ fresh lime juice
  • Dash of cinnamon agave syrup*
* To make:  A few cinnamon sticks warmed with agave and allowed to cool and infuse for a minimum of six hours
 
Directions:
  1. Shake with ice
  2. Strain into a highball glass filled with ice
  3. Top with Fever-Tree Premium Mixes Ginger Beer
Approx. Calorie Breakdown:
  • 44 ml of Vodka = 97.5 cals
  • Dash of cinnamon agave syrup = 16 cals
  • 15 ml lime juice = 4 cals
  • 88 ml Fever-Tree Ginger Beer = 33 cals
  • APPROX. TOTAL = 150.5 cals 
Notes on drink: 
 
Claire has chosen to use an infused agave rather than simple syrup to keep the Glycemic Index (GI) low. The infusion of the cinnamon will be complementary to the jerk seasoning of the chicken and add flavour without adding calories.
 
PAIRED WITH: Jerk Chicken on a Steamed Rye Bun
 

Earl Grey Fizz

Ingredients:
  • 15 ml Vodka
  • 15 ml earl grey tea syrup* 
* To make:  Use strong earl grey tea mixed 1:1 with super fine sugar to create a simple tea syrup
Directions:
  1. Shake with ice
  2. Strain into a champagne flute
  3. Top with Champagne
  4. Garnish with lemon twist and discard 
Approx. Calorie Breakdown: 
  • 15 ml of Vodka = 32.5 cals
  • 15 ml of earl grey tea syrup = 35 cals
  • Flute of Champagne = 90 cals
  • APPROX. TOTAL = 157.5 cals
PAIRED WITH: Warm Almond Tart

Smoky Martini

Ingredient:
  • 15 ml Vodka
  • 44 ml Darjeeling-infused Ardbeg (infused over 24 hours) 
  • Dash of Triple Sec
  • 7 Darjeeling ice cubes (frozen overnight)
Directions:
  1. Pre-prepare 7 large ice cubes made with Darjeeling tea
  2. Stir Triple Sec and Ardbeg over the ice cubes
  3. Strain into a chilled martini glass
  4. Garnish with orange twist
Approx. Calorie Breakdown:
  • 15 ml of Vodka = 32.5 cals
  • 44 ml of Ardbeg = 104 cals
  • 7 ml Triple Sec = 12 cals
  • APPROX. TOTAL = 148.5 calories
Notes on drink:
 
Triple Sec is slightly lower in calories than simple syrup (48 cals vs. 50 for simple syrup) but has the added advantage of bringing flavour rather than just sweetness. The tea ice cubes are also adding flavour and complexity without bringing additional calories.
