Flax Apple Pudding



A Tasty Low Calorie Breakfast


This breakfast is not only tasty, but it is also incredibly healthy! Flax is one of the highest sources of soluble fiber, which cleanses the colon and reduces cholesterol. The apples contain 5 grams of fiber each, including pectin, which is very beneficial for cleansing the gallbladder. Flax seeds contain up to 800 times more active lignans (plant estrogens found in the outer husk) than other plant sources. Studies have shown that these powerful antioxidants may reduce the risk of hormone-sensitive cancers such as breast and prostate cancer.

Note: If you choose to grind your own flax seeds in a coffee grinder, ensure it is extra fine to create a smooth texture. At times I have replaced the flax seeds with ground chia seeds for variety. 

Ingredients:
  • 3 medium apples, cored and chopped into cubes (with skin)
  • 1/2 cup (125 mL) filtered water
  • 2 tbsp (30 mL) flax protein powder or finely ground flax seeds
  • 1 tsp (5 mL) pure vanilla extract
  • 1/2 tsp (2.5 mL) cinnamon
  • top with 1 tbsp (15 mL) hemp seed or chopped nuts, unsweetened almond milk (for serving)
Directions:
  1. Bring the apples and water to a boil in a medium saucepan, then cover and reduce heat to a simmer for 10 minutes until the apples are soft and mushy.
  2. Remove from heat, mix in the flax protein powder, cinnamon, and vanilla until smooth.
  3. Portion into a breakfast bowl (or two). Top with chopped almonds and/or shredded coconut and almond milk.
