Noodle Stir Fry


  • 1/2 Packet Rice Noodles pre soaked in water
  • 2 Tbsp Vegetable Oil or Peanut Oil
  • 1/2 C White Onion fine dice
  • 2 Cloves Garlic smashed
  • 3 Tbsp Oyster Sauce
  • 1/2 Roasted Chicken shredded and bones removed
  • Juice of 1/2 Lemon
  • 1 Cup Chicken Stock
  • 1 bunch Spinach washed and chopped with no stems
  • 1 Carrot peeled in strips using a vegetable peeler
  • 1 thumb Ginger julienne fine
  • 1/2 Bunch Basil chopped
  • Bring a large sauté pan to medium heat and add oil
  • Add onions and garlic and sweat till translucent
  • Add oyster sauce, chicken, lemon juice and chicken stock and allow to reduce to half of original volume
  • Add spinach and allow to soften then add pre soaked noodles, making sure to drain well before adding
  • Once noodles begin to soften add carrot, ginger and basil just before serving making sure to toss to combine
  • Serve hot and sprinkle with black sesame seeds (optional)
