Classic Jam Thumbprint Cookies

  • 1 3/4 cups of all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cups of unsalted butter (room temperature)
  • 2/3 cups of sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1/3 cup of Raspberry, Strawberry, or Jam of your choice
 
Preheat the oven to 350 degrees and prepare 2 baking sheets by lining with parchment or silicone mats. 
 
In a medium bowl whisk together flour, baking powder and salt. Set Aside.
 
In the bowl of a stand mixer whip the butter and sugar on medium high until light and fluffy (approx. 5 minutes). Slowly beat in the egg and vanilla until just combined then slowly begin adding the flour mixture in two parts. Mix until incorporated. 
 
Use a tablespoon or a small ice cream scoop to portion the dough into one inch balls, then roll in sugar and place on the baking sheet about two inches apart. Press a thumbprint into each ball and fill each print with 3/4 tsp of jam. 
 
Bake the cookies for approximately 15 minutes or until the edges are golden. Remove from oven and allow to cool before plating.
