Red Velvet Crinkle Cookies

Not a superstar in the kitchen. Fake it with this super easy cookie recipe from Bobbette and Belle!

Ingredients
  • 1 box red velvet cake mix
  • 2 tablespoons flour
  • 2 eggs
  • 1/2 cup canola oil
  • 1 teaspoon vanilla
  • ¾ cup of icing sugar or granulated sugar (to roll cookies in)
  • 2/3 cup of white or dark chocolate chips
Directions:
  1. Preheat oven to 350 degrees. Lightly grease a large baking sheet, or line with parchment paper.
  2. In a large bowl, stir together the cake mix and flour until well mixed.
  3. Stir in the eggs, oil and vanilla and mix until smooth.
  4. Add chocolate chips
  5. Form dough into 1-inch balls, and then roll formed balls into granulated or icing sugar to coat.
  6. Place cookies on prepared baking sheets, 2 inches apart and bake for 8-10 minutes, until the edges are set and cookies begin to crack.
  7. Allow cookies to cool on baking sheets for 2-3 minutes before moving to racks to cool completely.
For a refreshing take on this cookie try sandwiching your favourite ice cream between two cookies. Delicous!
