Homemade Breakfast Bar

  • 3/4 cup brown sugar
  • 1 cup quick oats
  • 1.5 cups all purpose flour
  • 1/2 tbsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 3 tbsp ground flax seed
  • 3 tbsp wheat germ
  • 3 tbsp ground almonds
  • 25 ml canola oil
  • 1/3 cup of apple sauce
  • 25 ml water
  • 2 eggs
  • 3/4 tsp vanilla
  • 1 small apple finely diced
  • 1/4 cup of honey
  • 1/2 cup of walnuts
  1. Preheat oven to 350 degrees F. Grease a 8" x 12" pan or line with parchment paper.
  2. In a large bowl mix together sugar, oats, flour, baking soda, baking powder, ginger, cloves, nutmeg, cinnamon, salt, flax, almonds and wheat germ.
  3. Place dry ingredients in the bowl of a stand mixer and add canola oil, applesauce, water, eggs and vanilla one at a time slowly mixing until combined. Stir in any additions such as diced apple, nuts, dried cranberries, chocolate chips, pistachios etc.
  4. If the mixture becomes hard to mix, remove from the bowl and kneed by hand until well blended. Do not overwork the dough.
  5. Spread the mixture in a thin layer in the greased pan. If this is difficult dust your hands in flour and gently pat down into place. 
  6. Bake for 8 to 10 minutes. Remove from oven, allow to cool then remove from the pan and cut into rectangular bars. Store in an airtight container or freeze individually.
