Chicken and Sausage Gumbo

You Got to Make Gumbo if From the South. “Roux” is a everyday word for South Louisiana 

  • 1 cup all purpose flour 
  • 1 cup oil 
  • Heat oil in heavy pot, when oil is hot gradually add flour , stirring constantly until well mixed.
  • Lower heat and stir until chocolate brown.  Use warm water to dissolve roux
  • 1 fryer chicken, cut up
  • Cajun seasoning                  
  • Season with Cajun seasoning and brown all sides set aside                       
  • 1 large onions chopped     3 stalks celery chopped 
  • 1 green bell pepper chopped
  • 4 gloves of garlic
  • 1 tablespoon Worcestershire sauce
  • Pound of smoked sausage cut in pieces
  • 3 quarts of water or so
  • Chopped green onions chopped for top
Make roux , sauté onions ,celery, bell pepper , garlic until soft  add to roux. Add onions mixture to roux. Add water and Worcestershire. After browning chicken add to pot. Cook 1 to 2 hours on low. Add smoked sausage last 30 mins.
Serve over rice with green onions.
