Kirk's Mushrooms on Toast with Parmesan,Rocket, and Truffle oil

Ingredients: 4 Portions

  • 500g of Mixed mushrooms
  • 50g of butter
  • 2 cloves of garlic, one chopped
  • 4 slices of bread
  • 80g parmesan shaved
  • 4 small handfuls of Rocket
  • Drizzle of olive oil


  1. Prep and chop mushrooms, sauté in a pan with butter, oil, and the garlic. Do this over a medium heat so moisture comes out of the mushrooms . Add shallot and cook until mushrooms begin to get color, add parsley and reserve.
  2. Remove the crusts from the bread and drizzle with oil, char in a griddle pan so bread gets good color marks – about 4 mins per side. When bread is cooked, rub with a clove of garlic. Place a heaped spoonful of mushrooms onto the toast, shave on some parmesan, drizzle with truffle oil and place a small amount of rocket.

Joanna's Crostini with Whipped Goat's Cheese, Candied Pecans and Pickled Red Onions


  • 2 tbsp melted Butter
  • 2 tbsp Olive Oil
  • salt
  • Pepper
  • Finely chopped Parsley
  • Fresh Thyme leaves

Preheat oven to 375
Slice bread and add to baking tray
Add oil, butter, seasoning and parsley to bowl
Brush over bread
Add to oven and toast until golden brown
Remove from heat and let cool slightly
Top with goat cheese mixture, pickled red onions and sprinkle with thyme

Whipped Goats Cheese

1/2 cup Goat's Cheese
2 tbsp Cream

Whip until light and fluffy


Candied Pecans

In non stick pan toast pecans until fragrant over medium-high heat
Add 2 tbsp honey and cook until slightly smoking and sticking tp an
Immediately remove from heat, season with salt and pepper and scrape onto plate to cool
Finely chop and add to goat cheese mixture
Spoon over crostini

Pickled Red Onions (Optional) * Variation Note - if not using red onion, keep pecans whole and use to top whipped goats cheese. Sprinkle with Thyme, drizzle with some more honey and add back to oven for 2 more minutes to warm.

  • White Wine Vinegar
  • Black Peppercorns
  • 2, smashed Whole Garlic Cloves
  • 1/2 Red Onion sliced into fine rings

In sauce pot heat two parts water to 1 part white wine vinegar
Add enough sugar to just sweeten
Add several black pepper corns
And 2 smashed whole garlic cloves
Heat until simmering and stir until sugar has dissolved
Add sliced red onion and remove from heat
Let sit in liquid until cool or until onions are coloured pink (if you want to use them quickly)
When ready to use, remove from liquid and pat dry.
Use to top crostini

Top crostini with a smear of goat cheese whip, and a couple red onion pieces. Sprinkle with fresh thyme leaves.
