Summer Sweets: Strawberry Trifle Recipe

With fruits and berries prime for the picking during the summer months, opting for fresh fruit for your dessert is a no-brainer. Rodney's delicious strawberry trifle will be the hit of all your dinner parties all season. 

Strawberry Trifle 

Ingredients:
  • 4 cups fresh ripe strawberries
  • Zest and juice of one lime
  • 1 tbsp sugar
Whipped Cream:
  • 3 cups heavy cream
  • 1/3 cup icing sugar
  • 1 cup of vanilla custard
  • 2 tsp vanilla 
Trifle:
  • One 1-pound fresh pound cake
  • ½ cup crushed lemon or Amaretto cookie (something crunchy) 
  • 1/4 cup amaretto 
  • 1/4 cup grand marnier 

What To Do:
  1. For the strawberries: In a small bowl toss the strawberries with the sugar and lime and let stand at room temperature for 20 minutes.  
  2. Check for sweetness, adding more sugar if called for
  3. For the whipped cream: In a large bowl, using an electric mixer, whisk the cream to soft peaks with the vanilla then add the icing sugar.
  4. Whip to stiff peaks.
  5. Fold in the custard and Chill in fridge.
  6. For the trifle: cut the pound cake into 1 inch cubes.
  7. You will need 4 -6 250ml jam jars and place some cake in the bottom of each.  
  8. Drizzle the cake with the booze.
  9. Add a couple spoons of strawberries so it's even.
  10. Then add a large dollop of whipped cream.  
  11. Add more cake and drizzle of booze then add a spoon of cookie.
  12. Add 2 spoons of strawberries and spread evenly.
  13. Top with a large dollop of cream and garnish with cookie.
