Creating Ice Cream Sandwiches: Recipe

Peanut Butter Cookies

Ingredients: 

  • 1/2 cup soft butter
  • 1 cup smooth peanut butter
  • 3/4 cup firmly packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup a.p flour
  • 1/2 tsp baking soda
  • Pinch of salt

Directions:

  1. Blend in the dry ingredients together in a bowl and set aside.
  2. Cream the butter, peanut butter and brown sugar together with a paddle attachment in a stand mixer until well blended.  Add egg and mix well scrape down the side of bowl to spatula.  Add in the vanilla.
  3. Add in the dry ingredients and mix until well blended on slow speed.  Make sure to scrape down the sides of the bowl to ensure the ingredients are well blended.
  4. Scoop batter into 2 inch size balls using two spoons onto a parchment lined baking sheet.  Ensure the cookies are spaced 2 inches apart on the baking sheet.  Press the cookies down with a fork into a cross hatch pattern.  Dip the fork in flour to prevent stacking batter sticking to the fork.  Bake at 325F for approx 20 minutes rotating once.
To make ice cream sandwiches...
  1. Smear the spread of your choice (strawberry jam, grape jelly or chocolate) on the cookies.
  2. Spoon softened ice cream (either peanut butter, chocolate or vanilla) onto one of the cookies.
  3. Press down with another cookie and eat right away!
  4. Optional, roll ice cream sandwich along chocolate chips.

Yields 24 cookies
