Delicious foods to freeze

Chef and cook book author Trish Magwood shares delicious dinner ideas you can quickly assemble and then freeze for later. The recipes are from her upcoming book, In My Mother’s Kitchen, due this April.

Cottage Chili




Ingredients:

  • 1 Tbsp olive oil
  • 1 cup onion, chopped (1 medium onion)

  • 2 stalks chopped celery
  • 1 1/2 lb lean ground beef

  • 1 Tbsp flour
1 tsp salt

  • 1 cup chopped mushrooms
  • 1 cup chopped green pepper

  • 1 tsp minced garlic (1 clove)

  • 1 Tbsp chili powder
  • 2 14 oz tins kidney beans, strained, rinsed
  • 2 large 28 oz tins stewed tomatoes
 


Directions:

  1. Heat oil in a large heavy bottomed pot over medium-high heat.  
  2. Add oil and onion and sauté 1 minute.
  3. Add celery and sauté another minute.

  4. Add ground beef, breaking it up with a wooden spoon.
  5. Sprinkle with flour & salt and brown, about 10 minutes.

  6. Add mushrooms, green pepper and garlic and sauté a few minutes.

  7. Stir in chili powder, kidney beans and tomatoes.  
  8. Stir and simmer 30 minutes or more. 


This is best made the day before. Serve with warm crusty bread and a simple salad.
 This freezes well. Cool completely before freezing. Double it for another family meal!
 


Kitchen note: Chili tastes best when its on a very low and long simmer.  To make it easy without the fuss, turn it on and off a few times to keep it cooking continuing to concentrate the flavours.
