Smoked Salmon and Caper Flatbread



This flatbread is perfect for entertaining around the kitchen island when guests pop by over the holidays or any time of year.   

Ingredients:

  • 1 large Armenian or other flat bread
  • 100 gm crème fraiche, sour cream or creamed cheese ( 3 oz.)
  • 150 gm good quality smoked salmon (5 oz)
  • ¼ cup capers, ( 50 ml)
  • Fresh dill
  • Freshly cracked black pepper

Directions:

  1. Preheat oven to 350 D
  2. Place the flatbread on a baking sheet and heat at 350 D for about 5 minutes , just until hot and crisp.
  3. Remove from oven.  Spread a thin layer of crème fraiche or cream cheese and arrange the smoked salmon.  Then sprinkle with capers and some fresh sprigs of dill.  Cut and serve.

Serves 6-8 

Cannellini Bean Flatbread



Here is an easy grazing recipe for your last minute guests over the holidays.  You can customize the toppings and it feels like a homemade pizza.  

Ingredients:

  • 3 Tbsp good quality extra virgin olive oil
  • ¼ tsp. chili flakes
  • 1 large sprig rosemary
  • 1 can cannellini beans, rinsed
  • Salt and freshly cracked black pepper to taste
  • 1 Persian or Armenian Flatbread , heated until hot at 350 D
  • 150 gm  Prosciutto , thinly sliced
  • 90 gm Parmigianno cheese, sliced into shards with peeler  

Directions:

  1. In a large skillet heat olive oil over low setting.  Add the chili flakes and rosemary sprig and let heat gently for 2-3 minutes, just to develop aromas.   Add the can of beans and with a potato masher gently press down to slightly crush the beans to give them a creamy texture.  Season with salt and pepper and toss a few times, just to heat through.   Remove from heat.     
  2. Preheat oven to 350 D
  3. Place flat bread on a baking tray and heat until hot and just crisp on the outside, about 5 min.  
  4. Remove from oven and spoon warm bean mixture evenly over top.  Arrange slices of prosciutto and lay on shards of the Parmigianno cheese , using a peeler to create long curls.  Sprinkle with fresh parsley or micro herbs for some colour.  Slice and serve.

Serves 6-8
