Dr. Dukan Recommended Breakfast:

Dukan Oat Bran Galette
This light and easy pancake is a tasty way to eat your oat bran.
1 serving
Preparation time: 10 minutes

Ingredients:
  • 1 egg white
  • 2 tablespoons oat bran
  • 2 tablespoons fat- free plain Greek yogurt
  • 1 teaspoon zero- calorie sweetener suited for cooking and
  • baking, such as Splenda, for a sweet pancake or Pepper, herbs, and/or chopped garlic for a savory pancake

Dr. Dukan Recommended Lunch:  
A salad with as many vegtables from the 100 foods list with sliced chicken breast and yogurt dressing. Non fat yogurt for dessert.
 
Yogurt Dressing
 
This dressing, made with nonfat yogurt, makes an easy savory sauce.
 
Ingredients:
  • 6 to 8 ounces nonfat plain yogurt
  • 1 tablespoon mustard (Dijon, if possible)
  • Dash of vinegar
  • Salt, pepper, and herbs to taste
  • Beat the yogurt and mustard together until it has the consistency
  • of mayonnaise. Add the vinegar, salt, pepper, and herbs.

Dr. Dukan Recommended Dinner:  
The Dukan Miracle Soup, grilled hanger steak, grilled asparagus and the Dukan custard for dessert. 
 
Zucchini Velouté
Velouté means velvety a perfect description for this smooth and velvety puréed soup.
 
6 t o 8 servings
Preparation time: 20 minutes
Cooking time: 20-30 minutes

Ingredients:
  • 4 large zucchini, washed and sliced
  • 1 large onion, sliced
  • 1 carrot. Peeled and sliced
  • 1 turnip. Peeled and sliced
  • 2 quarts low-sodium beef broth
 Directions:
  1. Place the zucchini, onion, carrot and turnip in a large pot and cover with the beef broth.
  2. Bring the broth to a simmer and cook for 20-30 minutes.
  3. Pour the soup into a blender and puree until smooth, about 1 minute.  Serve hot.

Custard


Preparation time: 20 minutes plus a minimum of 2 hours 30 minutes chilling time

Cooking time: 35mins

Ingredients:
  • 1 teaspoon freshly ground nutmeg, plus a pinch for garnish
  • 1 tablespoon vanilla extract
  • 1 fresh vanilla pod, split lengthwise
  • 5 eggs
  • 1 1/2 cups nonfat milk
Directions:
  1. Preheat oven to 300 F
  2. In a large heatproof bowl, beat the eggs until smooth.
  3. Pour the milk into a medium saucepan. Scrape out the inside of the vanilla pod and add the seeds and the bean to the milk.
  4. Over low heat, heat the milk until small bubbles appear around the edge of the pan. Do not let the milk boil. 
  5. Remove the vanilla pod and slowly pour the hot milk over the eggs, stirring constantly.
  6. Add the vanilla extract and 1 teaspoon ground nutmeg.
  7. Pour the mixture into 6 individual ramekins.
  8. Sprinkle each with additional grated nutmeg.
  9. Place the ramekins in a large baking pan and fi ll the pan with boiling water three- quarters of the way up the sides of the ramekins.
  10. Bake for 30 to 35 minutes.
  11. Allow the custards to cool in the pan for 30 minutes and place in the refrigerator covered for 2 hours before serving.
